Silín is our playful coffee side-quest: tiny batches roasted on an Aillio Bullet R1, with the same care we bring to growing grain and baking bread. We roast light and lively – in that Nordic-leaning way – to let each farm, variety and process shine. Think fruit and florals, gentle sweetness and a cup that still behaves beautifully on espresso.

⚠️ Allergy Advisory:

Our roasting area also houses our flour mill, and airborne flour is part of the environment. As a result, our coffee may contain trace amounts of gluten or other grain allergens.

Grown high in the hills of Huila, this Pink Bourbon lot is all about clarity and fruit. On filter it’s juicy and refreshing – ripe peach, redcurrant and a little citrus blossom. On espresso it tightens up into a silky, clean shot with caramel sweetness and a gentle, sparkling acidity that still plays nicely in milk.

The cosy one that secretly isn’t caffeinated.

Apricot · Honey · Caramel

A decaf that happily sits on the shelf beside the “real” coffees. La Flaca is processed using natural sugarcane EA, keeping things sweet and clean. In the cup you’ll find soft red apple, candied orange and creamy toffee. As filter it’s calm and comforting; as espresso it’s round, sweet and very at home in a flat white – no decaf sadness here.

🌀 How We Roast

Nordic-Light, Bullet-Roasted

All Silín coffees are roasted on an Aillio Bullet R1 using the IBTS system. We keep total roast times short, with gentle, controlled development – aiming for clarity rather than darkness. The goal is a roast that behaves well across brew methods: bright and open as filter, clean and balanced as espresso, and sweet enough to still show through milk.

  • Light, fruit-forward profiles that still have sweetness and body.
  • Roasted as omni: one roast works for V60, batch brew, moka or espresso
