Silín is our playful coffee side-quest: tiny batches roasted on an Aillio Bullet R1, with the same care we bring to growing grain and baking bread. We roast light and lively – in that Nordic-leaning way – to let each farm, variety and process shine. Think fruit and florals, gentle sweetness and a cup that still behaves beautifully on espresso.
🛠️ Roaster Maintenance Update:
Our Bullet is getting a little TLC this week, so we’ve invited a guest roaster onto bar. Expect a sweet, balanced seasonal espresso from Carrow Coffee while we’re servicing the machine.

Our roasting area also houses our flour mill, and airborne flour is part of the environment. As a result, our coffee may contain trace amounts of gluten or other grain allergens.

While we’re doing maintenance on our roaster, we’ve got a guest coffee on bar from Carrow Coffee: Frank Torres’ washed lot from the mountains of Nariño. It’s beautifully smooth and silky, with a syrupy sweetness that hangs around — the kind of espresso that’s effortlessly tasty as a black coffee, and still shines through milk.
Carrow first met Frank back in 2016 while living in Colombia, and have been lucky to work directly with him since — a long-term relationship we love to see in coffee.
Nordic-Light, Bullet-Roasted
All Silín coffees are roasted on an Aillio Bullet R1 using the IBTS system. We keep total roast times short, with gentle, controlled development – aiming for clarity rather than darkness. The goal is a roast that behaves well across brew methods: bright and open as filter, clean and balanced as espresso, and sweet enough to still show through milk.
If you want your coffee to taste as alive as it does on roast day, the Airscape® canister is our favourite low-impact way to store it. The inner lid gently presses out oxygen, keeping your beans fresh without single-use valves or extra packaging.
