Silín is our coffee side-quest: bright, sweet coffees selected with the same care we bring to our grain and bread. We roast coffee to highlight their natural sweetness and sense of place.

Our Bellwether roaster allows us to roast coffee entirely on-site using all-electric, zero-emission technology. The result is consistency, cleaner production, and coffees that express their origin with remarkable clarity. 

We approach coffee the same way we approach baking: with patience, precision, and a focus on bringing out the best in every ingredient.

Our current Rwanda roast highlights everything we love about exceptional East African coffees: delicate florals, citrus lift, and remarkable clarity. Expect fragrant notes of bergamot and honeysuckle, supported by a refined black tea structure and a clean, elegant finish.

Roasted as a modern omni-roast, it shines as both filter coffee and espresso, producing a bright, aromatic cup with a tea-like character that remains balanced and approachable in milk. Floral, citrus-driven, and endlessly drinkable.
